Executive Sous Chef
A graduate of Culinary Institute of America ‘06, Chef Jeffrey Hunter was born in Seoul, South Korea, but spent most of his youth in Montana. With over 15 years of culinary experience in Montana, Chicago and Seattle, Chef Jeffrey is a proud pre-opening member of Lotte Hotel Seattle, joining us with a breadth of experience from Seattle’s beloved restaurants such as Canlis and a Relais & Châteaux in Montana.
Executive Pastry Chef
Acclaimed for his creative and elegant pastry creations, Artis Kalsons is the Executive Pastry Chef overseeing the pastry, dessert, chocolate and cake programming at LOTTE HOTEL SEATTLE and Charlotte Restaurant & Lounge. Born and raised in Latvia, Chef Kalsons was exposed to the pastry field at an early age through his uncle who worked in the pastry department his entire life.

Casey is a Colorado native with 10 years' experience as a Sommelier, primarily in the luxury markets of Aspen and Vail. His passion for travel, fine dining, and the outdoors have found the ideal home in Seattle. As a pre-opening member of Lotte Hotel Seattle, Casey's innovative ideas, attention to detail, and welcoming demeanor have contributed to Charlotte's rise among Seattle's finest restaurants.
