Charlotte Restaurant & Lounge features a contemporary approach to Pacific Northwest cuisine, showcasing elevated dishes using fresh, local ingredients served in an approachable way. Menu highlights include Hama Hama Oysters, Stone Oven Octopus, Halibut, Troll-Caught King Salmon, and the Wagyu Short Rib. Highlighting seasonal flavors and a classic yet contemporary style, the dessert menu offers standout options from mouthwatering Soufflé's to Lemon-Yuzu Tarts.
INNOVATIVE HAND-CRAFT DRINKS
To complement its unique approach to food, Charlotte Restaurant & Lounge features an innovative cocktail list, using local and fresh ingredients that incorporate Asian influence. Changing seasonally, the drink menu blends house-made ingredients of seasonal fruit, herbs and unique spices with texture, balance and finish. Menu highlights include the Gold Fashioned, #Loveforlotte, Thyme & Time Again, as well as “spirit free” options.

Executive Pastry Chef Artis Kalsons demonstrates exceptional technique combining his passion for seasonal flavors with a contemporary approach to the classics. Chef Artis Kalsons finds inspiration from the range of flavors that are much loved by today’s guests. The dessert menu highlights include classics such as the Lemon-Yuzu Tart, as well as seasonal specials.

Approaching a decade of experience in the hospitality industry, Chef Caleb Babcock has vast restaurant experience. His career began with training at Vail Resorts and he has been a key player
in Charlotte Restaurant & Lounge’s dynamic culinary team since 2020. Chef Caleb looks to the future with excitement as
he strives to further amplify the Seattle culinary space with
new flavors and concepts.
Executive Pastry Chef
Acclaimed for his creative and elegant style, Chef Artis Kalsons oversees every aspect of our pastry operation. Born and raised in Latvia, he has won numerous awards at competitive events, including the US Pastry Competition and National Dessert Competition. Career highlights include positions with Four Seasons hotels in Chicago and Palm Beach, and Fairmont Olympic Hotel Seattle, as well as an appearance at the James Beard Foundation’s Taste America: Seattle.
